Hazrat Sultan International Airport may be a relatively compact facility, but it punches well above its weight when it comes to giving travelers a genuine taste of Kazakhstan before they board. The main terminal houses a handful of cafes and a central food court area where you can settle in and graze on warm somsa — flaky, oven-baked pastries stuffed with lamb and onion — alongside cups of fragrant black tea served Kazakh-style with milk and sugar on the side. It is comfort food at its most honest, and a fine introduction to the region.
For something more substantial, the sit-down options near the departure lounge offer a rotating selection of traditional Kazakh mains, including beshbarmak, the beloved national dish of boiled meat layered over flat noodles and crowned with rich onion broth. You will also find shurpa, a hearty lamb and vegetable soup that feels like a warm embrace on a cold steppe morning. Staff are generally friendly and accustomed to travelers with limited Russian or Kazakh, so pointing at menu photos works perfectly well and nobody will mind.
Don't overlook the small grab-and-go counters scattered near the check-in hall if you're short on time. They stock freshly baked non bread, local dried fruits, and a surprisingly good selection of Turkistan-region sweets including chak-chak, the honey-drenched fried dough confection that travels beautifully as a gift. Grab a bottle of locally produced mineral water for the flight, and if the café near the gate is open, the milky Kazakh chai is worth every minute of your wait.
