The Essence of Bezmer Air Base

Let's be straightforward with you: Bezmer Air Base is a military installation rather than a civilian commercial airport, which means the typical airside dining experience most travelers expect simply doesn't exist here. There are no public departure lounges stocked with espresso bars or duty-free cafés. Personnel and authorized visitors on base are served through military canteen facilities, which prioritize function over flair — think hearty, filling Bulgarian home-style cooking served efficiently rather than any curated dining concept.
That said, the canteen food at Bulgarian military bases genuinely reflects the country's rich culinary soul. Expect classic dishes like bob chorba, a deeply savory bean soup that warms you from the inside out, alongside kavarma — slow-cooked pork or chicken stewed with peppers and onions in a clay pot. Banitsa, the flaky filo pastry filled with white cheese or spinach, is a staple breakfast item that soldiers and staff reach for every single morning. These aren't glamorous meals, but they're honest, nourishing, and authentically Bulgarian.
For anyone visiting the Bezmer area with a bit of freedom to explore off-base, the nearby town of Yambol is your real destination for a proper meal. It's just a short drive away and offers a handful of traditional mehanas — Bulgarian taverns — where grilled meats, shopska salad, and locally produced wine flow generously. Locals are warm and welcoming to visitors, and a meal in Yambol will give you a far richer taste of Bulgarian hospitality than anything you'd find at a military canteen window.
