California doesn't just have a food scene — it practically invented the modern American one. From the farm-to-table revolution that sprouted in Berkeley to the taco trucks of East Los Angeles, the state feeds its people with a confidence that comes from growing nearly half the nation's fruits and vegetables right here. At farmers markets from Ferry Plaza in San Francisco to the Santa Monica Wednesday market, you'll find chefs and home cooks alike filling their bags with blood oranges, heirloom tomatoes, and Meyer lemons that taste like a different planet.
The regional dishes are as diverse as the geography. In the Central Valley, Basque restaurants serve communal lamb stew dinners that have barely changed since Basque shepherds settled the area over a century ago. San Francisco claims cioppino, a briny, tomato-rich fisherman's stew born on the waterfront, while the Mission District's burritos — fat, foil-wrapped, and unapologetically enormous — have become an institution unto themselves. Head south and the food shifts again: San Diego's fish tacos, ideally eaten steps from the ocean, are simple, fresh, and borderline perfect.
Iconic restaurants here range from the legendary Chez Panisse in Berkeley, Alice Waters' temple of seasonal cooking, to Philippe the Original in Los Angeles, where they've been making French dip sandwiches since 1908. But some of the most memorable eating happens on the street — a paper plate of carnitas from a weekend taquiza, a warm garlic noodle bowl from a Vietnamese spot in San Jose's Little Saigon, or a just-picked peach from a Central Valley roadside stand that drips down your arm before you can even get back to the car.
