Concordia sits on the banks of the Uruguay River, and the water shapes everything here — including what ends up on your plate. Freshwater fish is the undisputed star of the local table. For a proper sit-down meal, head to any of the parrillas clustered near the costanera, where cuts of beef arrive at the table still crackling from the grill. El Viejo Almacén and La Orilla are perennial local favorites, beloved for generous portions and unpretentious hospitality. On weekends, street stalls near the waterfront serve chipa — the chewy Paraguayan-influenced cheese bread that crosses the border freely — alongside cold Quilmes beers. This is honest, generous cooking with a river running through it.
